In the past I couldn’t afford to. I was sick and overweight, and standard mayonnaise was definitely a contributing factor.

You see, the eggs and oil that make up 99% of traditional mayo were exactly the foods making me sick and miserable. Both ingredients cause our LDL (bad) cholesterol levels to rise. Both contribute to heart disease, diabetes, and obesity. Both are packed with unhealthy calories that have no place in a satisfying, body-shaping diet.

So I didn’t eat mayonnaise for years. I missed that delicious, satisfying texture and flavour, but it just wasn’t worth the damage to my weight loss goals.

Now though, I don’t have to miss out to stay slim. I can have a creamy mayonnaise dressing or sandwich any day of the week, because this recipe isn’t just low-fat, but perfectly healthy too.

Fat-Free Tofu Mayo for Body-Shaping Magic

Preparation: 5 minutes

Ingredients

  • 1 package (12.3 ounces) silken tofu, drained in a nut milk bag (these are $1 on eBay)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon coconut sugar
  • 1/ 4 teaspoon mustard powder
  • 1/ 8 teaspoon ground white pepper
  • 1/ 2 teaspoon Celtic salt (optional)

Instructions

  1. Combine all ingredients into food processor or blender and process until smooth.
  2. Transfer to an airtight container and refrigerate for at least 2 hours.
  3. Enjoy the sensational taste of this totally guilt-free mayonnaise!

This recipe can last up to 1 week airtight in the fridge.
