This recipe is simply so sexy and satisfying, and I’m really excited to share it with you. But first, a few facts so you understand why the food combinations here are so good for you.

More than 60 years ago, a man called Dr. Kempner treated more than 18,000 patients with a straightforward and weight-defying program. For more info, check out this blog I wrote all about it, but in short he proved that a diet of rice and fruit was more effective than the best of modern medicine in reducing weight, healing arteries, reducing heart size, reversing heart failure, and so much more. Other researchers were eventually able to replicate Kempner’s work, validating his astonishing results.

Here is my Sultry & Satisfying Veggie Rice Recipe for Every Body

You only need about 15 minutes to pull together this sexy little meal, and then 45 minutes to… play… while it cooks. See you in the kitchen! 😉

These ingredients will make enough rice to serve four people, but feel free to cut it in half if you’re planning a romantic dinner for two.

Simple, Sultry Ingredients

  • 2 red peppers, chopped
  • 2 cups vegetable broth (check the label and choose an organic one that’s free of preservatives!)
  • 1 cup brown rice
  • 1 can chopped chilis (optional—or add more if you can’t get enough heat!)
  • 1 jar chopped pimientos
  • 1 cup corn kernels (I prefer fresh, but canned organic is fine)
  • 1 tablespoon parsley
  • 1 teaspoon ground cumin
  • 2 cups chopped fresh spinach (pack those babies in tight!)
  • 1/4 cup chopped fresh cilantro (optional)
  • Fresh-cracked black pepper (optional)

Step-by-Step Instructions

  1. Sautee your peppers in a little bit of water in a large pan (no need to use oil!) for 2-3 minutes or until slightly soft.
  2. Add your rice, chili, pimientos, corn, parsley, cumin, and broth.
  3. Get the party started by bringing all that goodness to a boil, then cover and turn down the heat.
  4. Simmer it all together until the rice is cooked (around 45 minutes).
  5. Add in your spinach, cilantro, and black pepper, and give it a spin. Allow to cook a couple more minutes.
  6. Serve immediately, and enjoy the tantalizing and body-shaping power of food dynamics!
