This sexy tomato jam is the perfect addition to some eggless scrambled eggs, goes beautifully with ripe avocado, and will take your baked eggplant hot chips to the next level!

Here is my Spicy, Sexy Tomato Jam (to add to this week’s weight loss meal plan)…

Simple, Slimming Ingredients

  • 3 cups grape or cherry tomatoes, halved
  • 1 tbs pure maple syrup
  • 1 tsp ground cumin
  • 1/2 tsp minced fresh ginger
  • 1/2 tsp minced fresh red chile (optional)
  • 1/4 tsp crushed red pepper flakes (or to taste)
  • 1 pinch Celtic salt (optional; leave out for optimum body-shaping results)

Step-by-Step Instructions

  1. Slice your tomatoes in half, and combine them with the maple syrup in a medium saucepan.
  2. Sizzle those beauties for 5 minutes (or until they start to get juicy) over medium-low heat, stirring occasionally.
  3. Add all that flavour (cumin, ginger, red chile (if you like things hot), crushed red pepper flakes, and Celtic salt) and stir it up.
  4. Bring to a simmer, then turn the heat down low, cover, and allow all the flavours to mingle for at least 30 minutes, stirring every 5–10 minutes.
  5. Uncover the pan, and simmer for another 5 minutes or so to release any excess liquid.
  6. Turn off the heat and let things cool down before transferring your sassy sauce to an airtight container and storing in the fridge.
  7. Enjoy the sensational taste and satisfying flavours of this dynamic, weight-defying combination!

*Note: Recipe keeps up to one week in the fridge, but it probably won’t last that long. 😉
